Ingredients

Scale
  • 2 cups cooked chicken, shredded
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon dried thyme
  • 1 1/2 cups frozen mixed vegetables (peas, carrots, corn)
  • 1 cup cheddar cheese, shredded
  • 1 cup biscuit mix (such as Bisquick)
  • 1 cup milk
  • 1/2 cup unsalted butter, melted
  • 1 can (10.5 oz) cream of chicken soup
  • 1 1/2 cups chicken broth

Instructions

Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish.

Spread the shredded chicken evenly across the bottom of the baking dish.

Season the chicken with salt, black pepper, garlic powder, onion powder, and dried thyme.

Sprinkle the frozen mixed vegetables evenly over the chicken.

Add a layer of shredded cheddar cheese on top.

In a bowl, whisk together the biscuit mix and milk until smooth. Pour this mixture evenly over the chicken and vegetables. Do not stir.

In a separate bowl, mix the melted butter, cream of chicken soup, and chicken broth until combined. Pour this mixture evenly over the biscuit batter. Do not stir.

Bake for 40-45 minutes, or until the top is golden brown and the filling is bubbly.

Remove from the oven and let it cool for a few minutes before serving.

Notes

1. Best Chicken to Use

  • Rotisserie chicken adds extra flavor and saves prep time.
  • Leftover roasted or grilled chicken works well.
  • Canned chicken can be used in a pinch but may have a softer texture.

2. Customization Ideas

  • Swap cheddar cheese for mozzarella, gouda, or pepper jack.
  • Add extra seasonings like paprika, cayenne pepper, or Italian herbs for more depth.
  • Replace chicken with turkey, shredded beef, or mushrooms for a twist.

3. Storage & Reheating Tips

  • Refrigerate leftovers for up to 3 days in an airtight container.
  • Freeze for up to 2 months, ensuring it’s well wrapped.
  • Reheat in the oven at 350°F for 15-20 minutes for best texture.
