Ingredients

Scale
  • 2 cups mashed potatoes (cold, leftover potatoes work best)
  • 1 cup shredded cheddar cheese
  • 2 large eggs
  • 1/4 cup chopped green onions
  • 1/4 cup sour cream
  • Salt and pepper, to taste
  • Butter or non-stick spray, for greasing the muffin tin

Instructions

Preheat your oven to 400°F (200°C) and grease a mini muffin tin with butter or non-stick spray.

In a large bowl, combine the mashed potatoes, cheddar cheese, eggs, green onions, sour cream, salt, and pepper. Mix everything until well combined.

Spoon the potato mixture into the muffin cups, filling each to the top and slightly mounding them.

Bake for about 20-25 minutes, or until the tops are golden brown and slightly crispy.

Let the puffs cool in the tin for a few minutes before gently removing them. Serve warm.
