Ingredients

Scale
  • For the fries:
  • 4 large russet potatoes, peeled and cut into thin fries
  • 2 tbsp olive oil
  • 1 tsp paprika
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • ½ tsp cayenne pepper (adjust to taste)
  • 1 tsp salt
  • ½ tsp black pepper
  • For the nacho cheese sauce:
  • 2 tbsp butter
  • 2 tbsp all-purpose flour
  • 1 cup whole milk
  • 1 ½ cups shredded cheddar cheese (preferably sharp)
  • ½ tsp chili powder
  • ½ tsp garlic powder
  • ¼ tsp salt
  • 1 tsp hot sauce (optional)

Instructions

  • 1. Prepare the fries:
  • Preheat oven to 425°F (220°C).
  • In a large bowl, toss the cut potatoes with olive oil, paprika, garlic powder, onion powder, cayenne pepper, salt, and black pepper until evenly coated.
  • Arrange fries in a single layer on a baking sheet lined with parchment paper or lightly greased.
  • Bake for 30–35 minutes, flipping halfway through, until crispy and golden brown.
  • 2. Make the nacho cheese sauce:
  • In a medium saucepan, melt butter over medium heat.
  • Whisk in flour and cook for 1 minute, stirring constantly to form a roux.
  • Gradually whisk in milk and cook for 2–3 minutes, until the mixture thickens.
  • Reduce heat to low and stir in shredded cheese, chili powder, garlic powder, salt, and hot sauce (if using).
  • Stir until smooth and creamy. Keep warm.
  • 3. Serve:
  • Plate the hot fries and drizzle with warm nacho cheese sauce or serve on the side for dipping.
  • Optional: Top with chopped jalapeños, green onions, or a sprinkle of taco seasoning.

Notes

  • Fries Shortcut: Use frozen seasoned fries for convenience, or hand-cut russet potatoes for an authentic homemade touch. Soak fresh-cut potatoes in water to remove starch and get extra crispiness.

  • Signature Seasoning: The iconic flavor comes from a mix of paprika, chili powder, garlic powder, onion powder, cumin, and a pinch of cayenne for heat.

  • Toss After Baking: For best flavor, toss the fries in the spice mix after baking or frying so the seasoning sticks without burning.

  • Nacho Cheese Sauce: Make a quick homemade sauce with melted cheddar, evaporated milk, and a dash of hot sauce—or use Velveeta for that ultra-smooth texture.

  • Spice It Up: Add chopped jalapeños or a drizzle of hot sauce for extra heat.

  • Air Fryer Option: For a lighter version, cook fries in the air fryer at 400°F (200°C) for 15–18 minutes, shaking halfway through.

  • Dipping Delight: Serve with nacho cheese, sour cream, or guacamole for a dipping trio Taco Bell would envy.

  • Make It a Meal: Top with seasoned ground beef, cheese, sour cream, and green onions for fully loaded Nacho Fries Supreme.
