Smoked Sausage & Mozzarella Pasta is a creamy, flavorful dish that combines the smoky richness of sausage with the luscious, melt-in-your-mouth texture of mozzarella cheese. Enhanced with aromatic garlic, tangy sun-dried tomatoes, and a hint of spice from red pepper flakes, this pasta dish is the perfect blend of comfort and sophistication. It’s quick to prepare, making it ideal for busy weeknights, yet indulgent enough to serve for special occasions. The penne pasta holds the velvety sauce beautifully, ensuring every bite is packed with deliciousness.

Ingredients

Scale
  • 2 tablespoons olive oil
  • 0.4 lb (approximately 6.4 oz) smoked sausage, sliced
  • 1/4 cup sun-dried tomatoes, finely chopped
  • 4 garlic cloves, minced
  • 1 1/2 cups half and half
  • 1 cup shredded mozzarella cheese
  • 8 oz penne pasta
  • 1/4 teaspoon red pepper flakes
  • Salt, to taste (optional)

Instructions

  1. Cook the Pasta: Bring a large pot of salted water to a boil. Add the penne pasta and cook according to package instructions until al dente. Drain and set aside.
  2. Sauté the Sausage: In a large skillet over medium-high heat, heat the olive oil. Add the sliced smoked sausage and cook for about 2 minutes on each side until browned. Remove the sausage from the skillet and set aside.
  3. Prepare the Sauce Base: In the same skillet, add the chopped sun-dried tomatoes and minced garlic. Cook for about 1 minute, stirring constantly to prevent burning.
  4. Add Cream: Pour in the half and half, bringing the mixture to a gentle boil.
  5. Incorporate Cheese: Reduce the heat to low and add the shredded mozzarella cheese. Stir continuously until the cheese has fully melted into the sauce, creating a creamy consistency.
  6. Combine Ingredients: Return the cooked sausage to the skillet, and add the drained pasta. Stir well to ensure the pasta and sausage are evenly coated with the creamy sauce.
  7. Season: Sprinkle in the red pepper flakes and add salt to taste, if desired. Mix thoroughly to combine all flavors.
  8. Serve: Remove from heat and serve the pasta hot. Enjoy your meal!

Notes

  • Customizations: Feel free to swap smoked sausage with chicken sausage or a vegetarian protein for a different spin. You can also add vegetables like spinach or bell peppers for extra nutrition.
  • Spice Level: Adjust the red pepper flakes to your liking. A small pinch adds mild heat, but you can increase the amount for a spicier kick.
  • Storage: This dish is great for meal prep! Refrigerate leftovers for up to 3 days or freeze for up to 2 months. Reheat gently with a splash of milk or broth to revive the sauce’s creaminess.
  • Dietary Adjustments: For a lighter version, use low-fat mozzarella and replace half and half with milk or a dairy-free alternative.
  • Pairings: Complement this dish with garlic bread, a fresh green salad, or a glass of dry white wine for a complete meal.
