1 package (26 oz) frozen shredded hash browns, thawed

1 cup sour cream (or Greek yogurt as a substitute)

1 can (10.5 oz) cream of mushroom soup

3 cups shredded cheddar cheese, divided

1/2 teaspoon black pepper

1 teaspoon salt (optional, depending on sausage/soup sodium)

1 pound smoked turkey sausage, sliced into 1/4-inch rounds

Optional toppings: chopped green onions, parsley

Instructions

1. Preheat Oven

Preheat your oven to 350°F (175°C). Lightly grease a 9×13-inch baking dish with cooking spray or butter.

2. Prepare Base Mixture

In a large mixing bowl, combine:

  • Thawed shredded hash browns

  • Sour cream

  • Cream of mushroom soup

  • Salt and pepper

  • 2 cups of the shredded cheddar cheese

Mix well until thoroughly combined.

3. Transfer to Baking Dish

Spread the mixture evenly into the prepared baking dish.

4. First Bake

Bake uncovered for 35 minutes, until the top is slightly golden and the mixture is bubbling.

5. Add Sausage & Cheese Topping

Carefully remove the casserole from the oven.
Top evenly with the sliced smoked sausage and the remaining 1 cup of cheddar cheese.

6. Final Bake

Return to the oven and bake for an additional 15–20 minutes, until the cheese is melted and the sausage is heated through.

7. Cool & Serve

Let the casserole sit for 5–10 minutes before serving. Garnish with parsley or green onions if desired.
