  • 2 cups fresh spinach or kale, chopped
  • Salt and pepper to taste
  • Freshly grated Parmesan cheese for serving

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add diced onion, garlic, carrots, and celery. Sauté for about 5 minutes until softened.
  3. Pour in the chicken broth and bring to a gentle simmer.
  4. Stir in shredded chicken, diced tomatoes, oregano, basil, and red pepper flakes if using. Let simmer for 10 minutes.
  5. Add the pasta and cook until tender, about 8-10 minutes.
