For the bread:

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1 teaspoon baking soda

  • 1 teaspoon vanilla extract
  • 2 large eggs
  • ½ cup unsalted butter, melted
  • 1 can (20 oz) crushed pineapple, undrained

For the glaze:

  • 1 cup powdered sugar
  • 2 tablespoons pineapple juice (from the canned pineapple)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×5-inch loaf pan.
  2. In a large bowl, whisk together the flour, sugar, baking soda, and salt.
  3. In a separate bowl, beat the eggs, then add the melted butter, vanilla extract, and crushed pineapple with its juice. Mix well.
  4. Gradually add the wet ingredients to the dry ingredients, stirring until just combined. Do not overmix.
  5. Pour the batter into the prepared loaf pan and smooth the top.
  6. Bake for 50-60 minutes or until a toothpick inserted into the center comes out clean.
  7. Let the bread cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
  8. For the glaze, whisk together the powdered sugar and pineapple juice until smooth. Drizzle over the cooled bread before serving.
