1 box (3 ounces / 85 grams) orange gelatin mix
1 box (3.4 ounces / 96 grams) instant vanilla pudding mix
1 cup (240 ml) boiling water
½ cup (120 ml) cold water
1 container (8 ounces / 226 grams) whipped topping, thawed
1 cup (225 grams) small curd cottage cheese
1 can (11 ounces / 312 grams) mandarin oranges, drained
1 cup (50 grams) miniature marshmallows
In a large bowl, dissolve the orange gelatin mix in 1 cup (240 ml) boiling water. Stir until fully dissolved.
Add ½ cup (120 ml) cold water and mix well. Let cool slightly.
Whisk in the instant vanilla pudding mix until smooth and slightly thickened.
Refrigerate for 15–20 minutes until partially set.
Gently fold in the cottage cheese and whipped topping until combined.
Fold in the drained mandarin oranges and miniature marshmallows.
Cover and refrigerate for 2–3 hours until fully set. Serve chilled.
Ensure the mandarin oranges are well drained to prevent excess moisture. For a richer texture, substitute half of the cottage cheese with softened cream cheese. Best served within 24 hours for optimal texture and flavor.
