Ingredients

Scale

For the cake:

  • 1 cup all-purpose flour
  • ½ cup granulated sugar
  • ½ teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • ½ teaspoon ground cinnamon
  • ¼ cup unsalted butter, melted
  • ½ cup sour cream (or Greek yogurt)
  • 1 large egg
  • 1 teaspoon vanilla extract

For the apple filling:

  • 1 ½ cups apple pie filling, chopped

For the streusel topping:

  • ¼ cup all-purpose flour
  • ¼ cup brown sugar
  • ½ teaspoon ground cinnamon
  • 2 tablespoons unsalted butter, cold and cubed

For the glaze (optional):

  • ½ cup powdered sugar
  • 1 tablespoon milk
  • ½ teaspoon vanilla extract

Instructions

Preheat your oven to 350°F (175°C). Grease an 8×8-inch baking dish.

In a bowl, whisk together the flour, sugar, baking powder, baking soda, salt, and cinnamon.

In a separate bowl, mix the melted butter, sour cream, egg, and vanilla extract until smooth.

Combine the wet and dry ingredients, stirring until just combined.

Spread half of the batter into the prepared baking dish. Evenly spread the chopped apple pie filling over the batter. Top with the remaining batter.

In a small bowl, mix the flour, brown sugar, and cinnamon for the streusel. Cut in the cold butter using a fork or your fingers until crumbly. Sprinkle over the cake.

Bake for 35-40 minutes, or until a toothpick inserted in the center comes out clean.

Let the cake cool slightly. If using glaze, whisk powdered sugar, milk, and vanilla, then drizzle over the cake before serving.

Notes

  • Apple Choice: If using fresh apples, opt for Granny Smith, Honeycrisp, or Fuji for the best texture and flavor.
  • Streusel Tip: Keep butter cold for a perfectly crumbly topping. Avoid overmixing to maintain texture.
  • Baking Time: Oven temperatures vary, so start checking for doneness around the 35-minute mark. A toothpick should come out clean when inserted into the center.
  • Storage: Store at room temperature for 2 days, in the fridge for 5 days, or freeze for up to 3 months.
  • Serving Suggestion: Pair with coffee, chai tea, or apple cider for a cozy fall treat.
  • Make It Healthier: Swap sour cream for Greek yogurt and reduce sugar slightly if using a sweet apple filling.
