Ingredients

Scale

For the cake:

  • 1 box white cake mix
  • 1 cup water
  • ⅓ cup vegetable oil
  • 3 large eggs

For the filling:

  • 1 box (3.4 oz) instant vanilla pudding mix
  • 2 cups cold milk
  • Food coloring (pink, yellow, blue, green)

For the topping:

  • 8 oz whipped topping, thawed
  • Easter sprinkles
  • Mini chocolate eggs (optional)

Instructions

Preheat the oven to 350°F (175°C). Grease a 9×13-inch baking dish.

Prepare the cake mix according to the package instructions using water, oil, and eggs. Pour the batter into the prepared baking dish and bake for the time specified on the box.

Let the cake cool for 10 minutes. Using the handle of a wooden spoon, poke holes all over the cake.

In a bowl, whisk together the pudding mix and cold milk until smooth. Divide the pudding evenly into four small bowls and tint each with a different food coloring.

Spoon the colored pudding into the holes of the cake, alternating colors to create a rainbow effect. Smooth the top with a spatula.

Refrigerate the cake for about an hour to let the pudding set.

Spread the whipped topping evenly over the chilled cake. Decorate with Easter sprinkles and mini chocolate eggs if using.

Refrigerate until ready to serve. Slice and enjoy.

Notes

  • Cake Mix Alternatives: While white cake mix is recommended, you can use yellow, funfetti, or even chocolate cake mix for a different twist.
  • Pudding Options: Vanilla pudding works best for vibrant pastel colors, but lemon, cheesecake, or chocolate pudding can add a unique flavor.
  • Food Coloring Tip: Use gel food coloring instead of liquid for more intense colors without altering the pudding consistency.
  • Decorating Ideas: Try adding shredded coconut dyed green for a grass-like effect or drizzle white chocolate for an elegant touch.
  • Storage: Store in an airtight container in the fridge for up to 3 days. Freeze for up to 1 month (without the whipped topping) for longer storage.
