Ingredients
- 1 lb ground beef

- 2 cloves garlic minced
- Salt and pepper to taste
- 1 teaspoon paprika
- 1/2 teaspoon dried thyme
- 4 cups potatoes thinly sliced (about 4 medium potatoes)
- 1 1/2 cups shredded cheddar cheese
- 1 can 10.5 oz cream of mushroom soup
- 1/2 cup milk
- 2 tablespoons olive oil
Instructions
-
Preheat your oven to 375°F (190°C).
-
In a skillet over medium heat, cook ground beef until browned. Drain excess fat.
-
Add chopped onion and garlic to the skillet and sauté until soft. Season with salt, pepper, paprika, and thyme. Remove from heat.
-
In a bowl, whisk together the cream of mushroom soup and milk until smooth.
-
Lightly grease a 9×13-inch baking dish with olive oil.
-
Layer half of the sliced potatoes on the bottom of the dish.
-
Spread half of the beef mixture over the potatoes.
-
Sprinkle a layer of shredded cheese over the beef.
-
Pour half of the soup mixture evenly over the cheese.
-
Repeat layers with remaining potatoes, beef, cheese, and soup mixture.
-
Cover the dish with aluminum foil and bake for 45 minutes.
-
Remove foil and bake for another 15 minutes or until potatoes are tender and top is golden and bubbly.
-
Let rest for 5 minutes before serving.
Notes
- Use a mandoline for evenly sliced potatoes to ensure even cooking.
- Freshly shredded cheese melts better and gives a creamier texture than pre-shredded.
- Let the casserole rest for at least 5 minutes before serving to allow layers to set.
- For added texture, top with crushed crackers or French fried onions during the last 10 minutes of baking.
- Store leftovers in individual portions for easy reheating and meal prep throughout the week.
- Add chopped herbs like parsley or green onions before serving for a fresh finish.
