Ingredients

Scale
  • 1 lb ground beef
  • 2 cups uncooked pasta (elbow, penne, or rotini)
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 cup beef broth
  • 1 cup tomato sauce
  • 1/4 cup ketchup
  • 1 tbsp mustard (yellow or Dijon)
  • 1/2 tsp paprika
  • 1/2 tsp onion powder
  • 1/2 tsp garlic powder
  • 1 cup shredded cheddar cheese
  • 1/2 cup mozzarella cheese (optional, for extra cheesiness)
  • 2 tbsp olive oil or butter
  • Salt and pepper, to taste
  • Chopped parsley (optional, for garnish)

Instructions

  1. Cook the pasta according to package instructions. Drain and set aside.
  2. Heat olive oil or butter in a large skillet over medium heat. Add the chopped onion and cook until softened, about 3 minutes. Add the minced garlic and cook for another minute.
  3. Add the ground beef to the skillet. Cook until browned and fully cooked, breaking it apart with a spatula as it cooks. Season with salt and pepper to taste.
  4. Stir in the beef broth, tomato sauce, ketchup, mustard, paprika, onion powder, and garlic powder. Simmer for 5 minutes, allowing the flavors to meld.
  5. Reduce the heat to low and add the cooked pasta to the skillet. Stir to coat the pasta evenly in the sauce.
  6. Sprinkle the cheddar cheese (and mozzarella if using) over the pasta mixture. Cover the skillet with a lid and let the cheese melt, about 2-3 minutes.
  7. Remove from heat, sprinkle with chopped parsley if desired, and serve warm.

Notes

Flavor and Texture

  • Bold and Savory: The sauce is a perfect balance of tangy, smoky, and cheesy flavors that mimic the essence of a sloppy cheeseburger.
  • Creamy and Cheesy: The combination of cheddar and optional mozzarella creates a rich, gooey texture that’s perfect for pasta.

Tips for the Best Results

  • Freshly Grate the Cheese: For optimal melting, avoid pre-shredded cheese, which can become clumpy due to added anti-caking agents.
  • Balance the Sauce: If the sauce is too tangy, add a pinch of sugar; if it’s too sweet, adjust with a little mustard or Worcestershire sauce.
  • Choose the Right Pasta: Use pasta shapes like elbow, rotini, or penne that hold the sauce well. Cook them al dente to prevent sogginess.

Make It Your Own

  • Vegetarian Option: Swap ground beef with plant-based crumbles or lentils and use vegetable broth for a meat-free version.
  • Spicy Twist: Add jalapeños, hot sauce, or red pepper flakes to give the dish some heat.
  • Low-Carb Alternative: Replace pasta with zucchini noodles or cauliflower rice for a lighter option.

Serving Suggestions

  • Pair with a crisp Caesar salad or roasted vegetables to complement the richness of the dish.
  • Serve with garlic bread to soak up every bit of the cheesy, flavorful sauce.
  • Enjoy with a glass of iced tea, soda, or a light beer for the ultimate comfort meal experience.
