  • ½ tsp ground cinnamon
  • 2 tbsp unsalted butter
  • Maple syrup, for serving
  • Powdered sugar, for dusting (optional)

Instructions

  • In a shallow bowl, whisk together eggs, milk, vanilla extract, and ground cinnamon until well combined.
  • Lay a slice of bread flat and use a rolling pin to gently press and stretch it into a thin rectangle. Repeat with remaining slices.
  • Place one sausage half at the end of each slice of flattened bread. Tightly roll the bread around the sausage to create a neat cylinder.
  • Melt 1 tablespoon of butter in a large nonstick skillet over medium heat. Dip each roll-up in the egg mixture, turning to coat all sides, then transfer to the skillet.
  • Cook the roll-ups, turning occasionally, until all sides are golden brown and the egg coating is set, about 8–10 minutes total. Add the remaining 1 tablespoon of butter as needed to keep the rolls from sticking.
  • Remove the roll-ups from the skillet and let rest for 1–2 minutes before slicing each on the diagonal into bite-sized pieces.
  • Dust with powdered sugar if desired and serve immediately with warm maple syrup for dipping.
