  • 1 lb large shrimp, peeled and deveined
  • 8 oz pasta (penne, rotini, or spaghetti)
  • 2 tbsp olive oil
  • 4 cloves garlic, minced
  • 1 tsp red pepper flakes (optional)
  • 1 cup chicken broth
  • 1 tbsp lemon juice
  • ½ cup heavy cream
  • 1 cup grated mozzarella cheese
  • ½ cup grated Parmesan cheese
  • 2 tbsp fresh parsley, chopped
  • Salt and pepper to taste
  • 1 tbsp butter (for greasing)

Instructions

Preheat the oven to 375°F (190°C). Grease a 9×13-inch baking dish with butter.

Cook the pasta according to the package instructions. Drain and set aside, reserving ½ cup of pasta water.

Heat the olive oil in a large skillet over medium heat. Add the shrimp and cook for 2-3 minutes per side, until pink and cooked through. Remove the shrimp from the skillet and set aside.

In the same skillet, add the minced garlic and red pepper flakes (if using). Sauté for 1-2 minutes until fragrant.

Add the chicken broth, lemon juice, and heavy cream to the skillet. Bring to a simmer and cook for 3-4 minutes until the sauce thickens slightly. Season with salt and pepper to taste.

In a large mixing bowl, combine the cooked pasta, shrimp, and sauce. Stir in the mozzarella and half of the Parmesan cheese, mixing until well combined.

Transfer the pasta mixture to the prepared baking dish. Sprinkle the remaining Parmesan cheese over the top.

Bake for 15-20 minutes, or until the top is golden and bubbly.

Remove from the oven and garnish with fresh parsley before serving.
