Ingredients

Scale
  • 4 boneless, skinless chicken breasts
  • Salt and pepper, to taste
  • 1 cup dried cranberries
  • 1 cup crumbled feta cheese
  • 1/2 cup chopped green onions
  • 1/2 cup chopped walnuts or pecans (optional)
  • 1 tablespoon olive oil
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon garlic powder

Instructions

Preheat your oven to 375°F (190°C). Lightly grease a baking dish.

Place the chicken breasts in the baking dish and season both sides with salt, pepper, garlic powder, and dried thyme.

In a small bowl, mix together the dried cranberries, feta cheese, green onions, and nuts if using.

Spoon the cranberry feta mixture evenly over the top of the chicken breasts.

Drizzle olive oil over the top to help everything bake nicely and stay moist.

Bake for 25–30 minutes or until the chicken is cooked through and no longer pink in the center.

Let rest for a few minutes before serving. Serve warm with rice, quinoa, or roasted vegetables if desired.
