Instructions

Step 1: Make the Cheesecake Filling

  1. In a large mixing bowl, beat the softened cream cheese until smooth using a hand mixer or stand mixer.

  3. In a separate bowl, whip the chilled heavy cream until stiff peaks form.

Step 2: Prepare the Strawberries

  1. Place the diced strawberries in a bowl.

  2. Add 2 tablespoons of granulated sugar and stir to combine.

Step 3: Make the Crumb Mixture

  1. Crush the shortbread cookies or graham crackers until fine (using a food processor or rolling pin).
