  • 8 beef breakfast sausage links, fully cooked
  • 1 cup all-purpose flour
  • 2 tablespoons granulated sugar
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • 1 cup buttermilk
  • 1 large egg
  • 1 teaspoon vanilla extract
  • Vegetable oil or nonstick spray (for cooking)
  • Maple syrup (for serving)
  • Wooden skewers or popsicle sticks (optional)

Instructions

  1. In a mixing bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
  2. In another bowl, mix the buttermilk, egg, and vanilla extract until combined.
  3. Add the wet ingredients to the dry ingredients and stir just until combined. Do not overmix.
  4. If using skewers, insert one into each sausage link.
  5. Preheat a nonstick skillet or griddle over medium heat and lightly grease with oil or spray.
  6. Dip each sausage into the pancake batter, coating it evenly.
  7. Place the dipped sausage onto the skillet and cook for about 2–3 minutes per side, or until the pancake coating is golden brown and cooked through.
  8. Remove and repeat with remaining sausages.
  9. Serve warm with maple syrup for dipping or drizzling.

 

Notes

  • Be sure to fully cook raw sausage before dipping.

  • If the batter is too runny, chill it for a few minutes to thicken before coating the sausage.
