This Reuben Crescent Bake is a warm, flaky twist on the classic Reuben sandwich. Layers of buttery crescent roll dough encase savory corned beef (or pastrami), tangy sauerkraut, creamy Thousand Island dressing, and melty Swiss cheese, creating an irresistible baked dish. Perfect for a family dinner, game day snack, or potluck favorite, this easy-to-make casserole brings all the flavors of a Reuben into a comforting, golden-brown bake.

  • 2 cans (8 oz each) refrigerated crescent rolls
  • 1 lb thinly sliced corned beef or beef pastrami
  • 1 can (14 oz) sauerkraut, drained and rinsed
  • 4 cups shredded Swiss cheese
  • 1 cup Thousand Island dressing
  • 1 egg, beaten

Instructions

Preheat your oven to 375°F (190°C).

Unroll one can of crescent roll dough and press it into the bottom of a greased 9×13-inch baking dish to form the base crust.

Layer the corned beef or beef pastrami evenly over the dough, followed by the sauerkraut and shredded Swiss cheese.

Drizzle the Thousand Island dressing evenly over the layers.

Unroll the second can of crescent roll dough and place it over the top to create the crust. Pinch the edges to seal.

Brush the beaten egg over the top crust to help it brown nicely during baking.

Bake in the preheated oven for 20-25 minutes, or until the crust is golden brown.

Allow the bake to cool for about 10 minutes before slicing and serving.

  • Drain & Rinse the Sauerkraut – To avoid excess moisture, drain and rinse the sauerkraut, then pat it dry before layering.
  • Prevent a Soggy Crust – If you like a crispier bottom, pre-bake the first layer of crescent roll dough for 5 minutes before adding toppings.
