One-Pot Creamy Salmon Pasta

  • 8 oz (225g) pasta of choice
  • 1 tbsp olive oil
  • 1 small onion, finely chopped

  • 1 tsp Italian seasoning
  • ½ tsp salt (adjust to taste)
  • ½ tsp black pepper
  • 1 cup cooked salmon, flaked
  • ½ cup grated Parmesan cheese
  • 1 cup fresh spinach (optional)
  • 1 tbsp lemon juice
  • Fresh parsley, for garnish

Instructions

In a large pot or deep skillet, heat olive oil over medium heat. Add chopped onion and cook until softened. Add garlic and sauté for another 30 seconds.

Pour in the heavy cream and chicken broth. Stir in Italian seasoning, salt, and black pepper.

Add the uncooked pasta to the pot. Bring to a gentle simmer and cook, stirring occasionally, until the pasta is tender and the sauce has thickened (about 10-12 minutes).

Once the pasta is cooked, stir in the flaked salmon, Parmesan cheese, and spinach (if using). Cook for another 2 minutes until the spinach wilts and the cheese melts into the sauce.

Remove from heat and add lemon juice. Stir well and adjust seasoning if needed.

Garnish with fresh parsley and serve warm.
