One Pot Chicken Dumplings: A Cozy Meal Recipe for Any Day

Chicken and Dumplings is the ultimate comfort food, combining tender chicken, flavorful broth, and soft, fluffy dumplings in one pot. For the chicken and broth:

  • 1 lb boneless, skinless chicken breasts or thighs
  • 6 cups chicken broth

  • 2 celery stalks, chopped
  • 3 cloves garlic, minced
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • 1 bay leaf
  • Salt and pepper to taste

For the dumplings:

  • 2 cups all-purpose flour
  • 1 tbsp baking powder
  • ½ tsp salt
  • ½ tsp sugar
  • ¾ cup milk
  • 1 large egg
  • 3 tbsp melted butter
  • 1 tbsp fresh parsley, chopped

Instructions

  1. In a large pot, combine the chicken, chicken broth, onion, carrots, celery, garlic, thyme, rosemary, bay leaf, salt, and pepper. Bring to a boil, then reduce the heat and simmer for about 25-30 minutes, or until the chicken is fully cooked.
  2. Remove the chicken from the pot and shred it using two forks. Set aside. Discard the bay leaf.
  3. In a separate bowl, whisk together the flour, baking powder, salt, and sugar for the dumplings. Add the milk, egg, and melted butter, and stir until just combined. Be careful not to overmix.
  4. Add the shredded chicken back into the pot, along with any juices. Stir to combine.
  5. Using a spoon, drop spoonfuls of the dumpling batter into the simmering broth. Make sure the dumplings are evenly spaced.
  6. Cover the pot with a lid and let the dumplings cook for about 15-20 minutes, or until they have risen and are cooked through.
  7. Garnish with chopped parsley before serving.
