  • 16 oz (450g) cream cheese, softened
  • 1 cup sweetened condensed milk
  • ½ cup fresh lemon juice
  • 1 tbsp lemon zest
  • 1 tsp vanilla extract

For the topping (optional):

  • Whipped cream
  • Lemon slices or zest for garnish

Instructions

In a medium bowl, mix graham cracker crumbs, melted butter, and sugar until combined.

Press the mixture firmly into the bottom of a parchment-lined 8×8-inch baking dish to form the crust. Place in the refrigerator to set while preparing the filling.

In a large bowl, beat the softened cream cheese until smooth and creamy.

Add sweetened condensed milk, lemon juice, lemon zest, and vanilla extract. Mix until the filling is smooth and well combined.

Pour the filling over the chilled crust and smooth the top with a spatula.

Refrigerate for at least 4 hours, or until firm.

Once set, cut into bars and top with whipped cream and lemon garnish if desired.
