Ingredients

Scale
  • 3 lbs potatoes (russet or Yukon gold), diced into 1-inch cubes
  • 1 lb turkey bacon, cooked and crumbled
  • 1 cup shredded cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 1/2 cup sour cream
  • 1/2 cup mayonnaise
  • 1/2 cup green onions, chopped (plus extra for garnish)
  • 2 tbsp unsalted butter, melted
  • 1 tsp garlic powder
  • 1/2 tsp smoked paprika
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C). Grease a 9×13-inch baking dish or line it with parchment paper.
  2. In a large mixing bowl, combine the diced potatoes with melted butter, garlic powder, smoked paprika, salt, and pepper. Toss to coat evenly.
  3. Spread the seasoned potatoes evenly in the prepared baking dish. Bake for 35-40 minutes, stirring halfway through, until the potatoes are tender and golden brown.
  4. In a separate bowl, mix sour cream, mayonnaise, cheddar cheese, mozzarella cheese, and half of the green onions.
  5. Once the potatoes are done baking, remove them from the oven and stir in the sour cream mixture until evenly coated. Sprinkle the crumbled turkey bacon over the top.
  6. Return the dish to the oven and bake for an additional 10-15 minutes, or until the cheese is melted and bubbly.
  7. Remove from the oven, garnish with the remaining green onions, and serve warm.

Notes

1. Choosing the Right Potatoes:

  • Russet potatoes are best for achieving crispy edges and a fluffy interior, while Yukon gold potatoes add a buttery, rich flavor. You can also substitute with red potatoes or sweet potatoes for a twist.

2. Crispier Potatoes Tip:

  • To ensure your potatoes roast perfectly, pat them dry after washing and avoid overcrowding the pan. Toss them halfway through roasting for even browning.

3. Healthier Substitutions:

  • Replace sour cream with plain Greek yogurt for a tangy yet lighter option.
  • Use low-fat cheese or plant-based alternatives to cater to dietary preferences.
  • Opt for turkey bacon or a vegetarian bacon substitute to cut down on fat.

4. Prep Ahead:

  • Roast the potatoes and prepare the sour cream mixture in advance. Combine everything and refrigerate overnight, then bake when ready to serve.

5. Storing Leftovers:

  • Store leftovers in an airtight container in the refrigerator for up to 3–4 days. Reheat in the oven at 350°F for the best texture or microwave for convenience.

6. Customization Options:

  • Add diced jalapeños, hot sauce, or pepper jack cheese for a spicy twist.
  • Include roasted mushrooms or caramelized onions for extra depth of flavor.
  • Sprinkle crispy fried onions or crushed potato chips on top for added crunch.

7. Perfect Pairings:

  • Serve alongside grilled meats, barbecue dishes, or roasted vegetables for a balanced meal.
