  • 2 medium zucchinis, sliced into thin rounds
  • 2 cups cooked chicken breast, shredded or diced
  • 1 cup cherry tomatoes, halved
  • ½ cup Kalamata olives, pitted and sliced
  • ⅓ cup red onion, thinly sliced
  • 2 cloves garlic, minced
  • 1 cup crumbled feta cheese
  • 1 cup shredded mozzarella cheese
  • 1 tsp dried oregano
  • ½ tsp dried basil
  • Salt and black pepper, to taste
  • 2 tbsp olive oil

 

Instructions

Preheat the oven to 375°F (190°C) and lightly grease a 9×13-inch baking dish.

In a large bowl, combine the zucchini slices, cooked chicken, cherry tomatoes, olives, red onion, garlic, oregano, basil, salt, and pepper. Drizzle with olive oil and toss to coat evenly.

Spread the mixture evenly into the prepared baking dish.

Sprinkle the top with mozzarella cheese, then crumble the feta cheese over everything.

Bake for 25–30 minutes, or until the cheese is melted and bubbly and the zucchini is tender.

Let cool slightly before serving.
