Ingredients

Scale
  • 2 ripe bananas, mashed
  • 1 ½ cups all-purpose flour
  • 1 tsp baking soda
  • ½ tsp salt
  • ¼ cup unsalted butter, softened
  • ½ cup granulated sugar
  • ½ cup brown sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • ½ cup chopped walnuts or pecans (optional)
  • ½ cup chocolate chips (optional)

Instructions

Preheat your oven to 350°F (175°C).

In a medium bowl, whisk together the flour, baking soda, and salt.

In a separate large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.

Add the mashed bananas, egg, and vanilla extract to the butter mixture and stir until combined.

Gradually add the dry ingredients to the wet mixture and mix until just combined.

Fold in the chopped nuts and chocolate chips, if using.

Drop spoonfuls of dough onto a parchment-lined baking sheet, spacing them about 2 inches apart.

Bake for 10-12 minutes or until the edges are golden brown.

Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.

Notes

  • Ripe Bananas: The riper, the better. Use bananas with brown spots or nearly black skins.

  • Make It Vegan: Swap the egg for a flax egg and use coconut oil instead of butter.

  • Gluten-Free Option: Use oat flour or a certified gluten-free flour blend.

  • Freezable: Freeze baked cookies or raw dough for up to 3 months.

  • Add-ins: Chocolate chips, walnuts, pecans, cinnamon, or vanilla extract elevate the flavor.

  • Portion Control: Use a small cookie scoop for evenly sized cookies and even baking.
