Ingredients

Scale
  • 2 tablespoons unsalted butter
  • 2 tablespoons honey (preferably raw for richer flavor)
  • 1 (16 oz) bag frozen corn, thawed (or 3 cups fresh corn kernels)
  • 2 oz cream cheese, softened (full-fat for creamier texture)
  • 1/2 teaspoon salt (or to taste)
  • 1/4 teaspoon freshly ground black pepper

Instructions

  • Melt the butter and honey

    • Place a large skillet over medium heat.

    • Add the butter and honey, stirring continuously until melted and slightly bubbly (about 2 minutes).

  • Add the corn

    • Stir the corn into the honey butter mixture.

    • Coat evenly and cook for 1 minute to begin flavor infusion.

  • Cook until tender

    • Continue cooking for 6–8 minutes, stirring occasionally, until the corn is fully heated and tender.

  • Add the cream cheese

    • Reduce the heat to low.

    • Add the softened cream cheese and stir until completely melted and creamy (about 2–3 minutes).

  • Season and serve

    • Taste and adjust seasoning with salt and pepper.

    • Serve immediately while hot.

Notes

  • Fresh corn option: Use kernels cut from 3–4 ears of fresh corn for a sweeter, juicier version.

  • Make it spicy: Add 1/4 teaspoon red pepper flakes or cayenne for a sweet-spicy kick.

  • Dairy-free option: Substitute with plant-based butter and vegan cream cheese.

  • Meal prep tip: Prepare up to the cream cheese step, refrigerate, and finish before serving.
