Greek Chicken Tenders are quick, juicy, and packed with zesty Mediterranean flavor. Marinated in a blend of Greek yogurt, olive oil, lemon juice, and herbs, then grilled to perfection, these tenders are ideal for salads, wraps, or meal-prep bowls.   • 1 ½ lbs chicken tenders
  • ⅓ cup plain Greek yogurt
  • 3 tbsp olive oil
  • 2 tbsp fresh lemon juice
  • 3 garlic cloves, minced
  • 1 tbsp red wine vinegar (omit if avoiding all wine products)
  • 1 tsp dried oregano
  • ½ tsp dried thyme
  • ½ tsp salt
  • ¼ tsp black pepper

Instructions

In a medium bowl, whisk together the Greek yogurt, olive oil, lemon juice, garlic, red wine vinegar (or omit), oregano, thyme, salt, and pepper.

Add the chicken tenders to the bowl and toss until fully coated in the marinade. Cover and refrigerate for at least 30 minutes, or up to 4 hours.

Preheat a grill or grill pan over medium-high heat.

Remove the chicken from the marinade, letting the excess drip off. Grill the chicken tenders for about 3–4 minutes per side, or until fully cooked and slightly charred.

Remove from the grill and let rest for a few minutes before serving.

 

Notes

  • For best flavor, use fresh lemon juice and quality extra virgin olive oil.

  • Marinate no longer than 4 hours to avoid mushy texture.

  • If grilling outdoors, use skewers for easier flipping and serving.

  • Serve with homemade tzatziki or hummus for dipping.

  • Store leftovers in the fridge for up to 4 days or freeze for later use.
