Ingredients

Scale
  • 12 oz (340g) pasta (penne, rigatoni, or your choice)
  • 2 cups cooked chicken, shredded or diced
  • 6 oz (170g) chicken ham, chopped
  • 3 cloves garlic, minced
  • 2 cups shredded mozzarella cheese
  • 1 cup grated Parmesan cheese
  • 2 cups heavy cream or half-and-half
  • 2 tbsp butter
  • 1 small onion, finely chopped
  • 1 tsp dried Italian herbs (oregano, basil, thyme)
  • Salt and pepper to taste
  • Fresh parsley, chopped (optional for garnish)

Instructions

  • Preheat oven: Set oven to 375°F (190°C).
  • Cook pasta: Bring a large pot of salted water to a boil. Add pasta and cook until al dente according to package instructions. Drain and set aside.
  • Sauté aromatics: In a large skillet, melt butter over medium heat. Add minced garlic and chopped onion, sautéing until fragrant and soft.
  • Add chicken and chicken ham: Stir in cooked chicken and chopped chicken ham, cooking for 2-3 minutes to warm through.
  • Make sauce: Pour in heavy cream, add dried Italian herbs, salt, and pepper. Simmer gently for 5 minutes until sauce slightly thickens.
  • Combine pasta and sauce: Add cooked pasta to the skillet and toss to coat evenly.
  • Assemble bake: Transfer half of the pasta mixture into a greased casserole dish. Sprinkle half of the mozzarella and Parmesan cheeses over it. Add the remaining pasta mixture, then top with the rest of the cheese.
  • Bake: Bake uncovered for 20-25 minutes, or until cheese is melted, bubbly, and golden on top.
  • Garnish and serve: Remove from oven, let cool for a few minutes, garnish with fresh parsley if desired, and serve.

Notes

  • Use cooked, diced chicken breasts or thighs for best texture and flavor.

  • Fresh garlic adds vibrant flavor, but garlic powder can be used in a pinch.

  • Combine Parmesan with mozzarella or provolone cheese for a melty, cheesy topping.

  • You can add vegetables like spinach, broccoli, or mushrooms to increase nutrition and flavor.

  • Cook pasta just until al dente before baking to avoid mushiness.

  • Let the casserole rest for a few minutes after baking to set and make serving easier.
