Ingredients

Scale

For the chicken and potatoes:

  • 4 boneless, skinless chicken breasts
  • 1 lb (450g) baby potatoes, halved
  • 3 tbsp olive oil
  • 4 cloves garlic, minced
  • 1 tsp Italian seasoning
  • ½ tsp paprika
  • Salt and pepper, to taste

For the topping:

  • ½ cup grated Parmesan cheese
  • 2 tbsp fresh parsley, chopped

Instructions

Preheat your oven to 400°F (200°C). Lightly grease a large baking dish or sheet pan.

Place the chicken breasts and halved baby potatoes in the baking dish. Drizzle with olive oil.

In a small bowl, mix minced garlic, Italian seasoning, paprika, salt, and pepper. Rub this mixture evenly over the chicken and potatoes.

Sprinkle grated Parmesan cheese generously over the chicken and potatoes.

Bake for 35-40 minutes, or until the chicken is cooked through and the potatoes are tender. Check that the internal temperature of the chicken reaches 165°F (75°C).

Remove from the oven and let rest for a few minutes. Garnish with fresh parsley before serving.

Notes

  • Ingredient Tips:
    • Use freshly grated Parmesan cheese for the best flavor and texture. Pre-shredded cheese may not melt as well.
    • Baby potatoes work best for their quick cooking time and creamy texture, but Yukon Gold or fingerling potatoes are great substitutes.
    • Adjust the seasoning blend to your taste—try adding smoked paprika or red pepper flakes for a spicy kick.
  • Preparation Tips:
    • To save time, chop the potatoes and mix the seasoning blend ahead of time. Store them in the fridge until ready to cook.
    • For extra crispy potatoes, make sure they’re spaced out in the baking dish and flipped halfway through baking.
  • Cooking Adjustments:
    • If using bone-in chicken, increase the cooking time by 10-15 minutes and check the internal temperature for doneness.
    • If you’d like extra browning, switch to the broil setting for the last 2-3 minutes of cooking.
  • Dietary Notes:
    • To make this dish keto-friendly, substitute the potatoes with low-carb veggies like zucchini or cauliflower.
    • For a dairy-free version, use nutritional yeast or dairy-free Parmesan alternatives.
  • Storage and Reheating:
    • Store leftovers in an airtight container in the refrigerator for up to 3 days.
    • Reheat in the oven or air fryer for crispy potatoes and juicy chicken.
