Ingredients

Scale
  • For the Garlic Butter Chicken Bites:
  • 1 ½ lbs (680g) boneless, skinless chicken breasts or thighs, cut into bite-sized pieces
  • 1 tsp paprika
  • ½ tsp garlic powder
  • Salt and pepper to taste
  • 2 tbsp olive oil
  • 2 tbsp butter
  • 3 cloves garlic, minced
  • 2 tbsp chopped fresh parsley (optional, for garnish)
  • For the Parmesan Cream Sauce:
  • 1 tbsp butter
  • 2 cloves garlic, minced
  • 1 cup heavy cream
  • ½ cup grated Parmesan cheese
  • Salt and pepper to taste
  • Pinch of crushed red pepper flakes (optional)
  • For the Cheesy Roasted Potatoes:
  • 1 ½ lbs baby potatoes, halved
  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • ½ tsp paprika
  • Salt and pepper to taste
  • 1 cup shredded cheddar or mozzarella cheese
  • 2 tbsp chopped green onions or parsley (optional)

Instructions

  • Make the Cheesy Roasted Potatoes:
  • Preheat oven: Set oven to 400°F (200°C).
  • Prepare potatoes: Toss halved baby potatoes in olive oil, garlic powder, paprika, salt, and pepper.
  • Roast: Spread potatoes on a baking sheet in a single layer. Roast for 25–30 minutes, flipping halfway through, until golden and tender.
  • Add cheese: Sprinkle shredded cheese over the roasted potatoes and return to oven for 5 more minutes until cheese is melted and bubbly. Garnish with green onions or parsley.

  • Cook the Garlic Butter Chicken Bites:
  • Season chicken: In a bowl, toss chicken pieces with paprika, garlic powder, salt, and pepper.
  • Sear chicken: Heat olive oil in a large skillet over medium-high heat. Add chicken and sear for 3–4 minutes per side until golden and cooked through. Remove chicken from skillet and set aside.
  • Make garlic butter: In the same skillet, reduce heat to medium. Add butter and minced garlic. Sauté for 30 seconds until fragrant.
  • Return chicken: Add chicken back to the skillet and toss in the garlic butter until well coated. Remove from heat and set aside while you make the sauce.

  • Make the Parmesan Cream Sauce:
  • Sauté garlic: In a small saucepan, melt butter over medium heat. Add minced garlic and cook for 1 minute.
  • Add cream: Pour in heavy cream and bring to a gentle simmer. Stir in Parmesan cheese, salt, pepper, and red pepper flakes (if using). Cook until sauce thickens slightly, about 3–4 minutes.

  • Serve:
  • Spoon Parmesan cream sauce over garlic butter chicken bites.
  • Serve with cheesy roasted potatoes on the side.
  • Garnish with chopped parsley or green onions if desired.

Notes

  • Chicken Tip: Cut chicken into even bite-sized pieces for a quick, even sear. Pat dry before cooking for the best caramelization.

  • Garlic Butter: Sauté garlic in butter just until fragrant—don’t burn it! This builds the base flavor for the sauce.

  • Cream Sauce: Use heavy cream or half-and-half for the richest texture. Freshly grated Parmesan melts smoother and tastes better than pre-shredded.

  • Roasted Potatoes: Baby potatoes or Yukon Golds work great. Roast cut-side down for crispy edges, and finish with shredded cheese during the last 5 minutes of baking.

  • Herbs Matter: Sprinkle chopped parsley or thyme for a pop of freshness. A touch of rosemary works beautifully with the potatoes.

  • Make It a Meal: Serve with a light green salad or steamed veggies to round out the richness.

  • Time-Saver: Start roasting the potatoes first, then cook the chicken and make the sauce while they bake to streamline your prep.
