Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Scrub the potatoes, then rub them with olive oil, salt, and black pepper. Place them on a baking sheet and bake for 50-60 minutes, or until fork-tender.
  3. While the potatoes are baking, melt butter in a pan over medium heat. Add sliced onions, salt, black pepper, and thyme. Cook, stirring occasionally, for 20-25 minutes until the onions are deeply caramelized.
