The addition of Parmesan cheese creates a golden, savory crust that contrasts beautifully with the tender potatoes beneath. Ingredients

Scale
  • 4 large russet potatoes, peeled and thinly sliced
  • 3 tbsp olive oil
  • 2 tbsp balsamic vinegar
  • 1 tbsp fresh thyme leaves
  • 1 tsp garlic powder
  • Salt and pepper to taste
  • ½ cup grated Parmesan cheese
  • Fresh thyme sprigs for garnish

Instructions

Preheat your oven to 375°F (190°C). Grease a 9-inch round cake pan or tart pan with olive oil.

In a large bowl, toss the thinly sliced potatoes with olive oil, balsamic vinegar, fresh thyme leaves, garlic powder, salt, and pepper until the potatoes are well-coated.

Arrange the potato slices in a spiral pattern in the prepared pan, layering them neatly to form a tight, even circle.

Sprinkle the grated Parmesan cheese evenly over the top of the potatoes.

Cover the pan with foil and bake for 40-45 minutes, or until the potatoes are tender when pierced with a fork.

Remove the foil and bake for an additional 10-15 minutes to allow the top to become golden and crispy.

Once the torte is crispy and cooked through, remove it from the oven and let it cool for a few minutes before carefully inverting it onto a serving platter.

Garnish with fresh thyme sprigs and serve warm.

Notes

  • Be sure to slice the potatoes as uniformly as possible for even cooking. A mandolin slicer can help you achieve this.

  • If you prefer a stronger garlic flavor, feel free to add a few cloves of roasted garlic to the layers.

  • Parmesan cheese is key to creating a crispy, flavorful topping. If you substitute a different cheese, the texture may vary slightly.

  • The torte can be prepared a day ahead of time and baked just before serving. This makes it an excellent choice for gatherings where you need to save time.

  • For a lighter version, consider reducing the amount of olive oil or using a lower-fat cheese alternative.

This potato torte is sure to become a favorite, adding a touch of elegance and flavor to any meal!
