12 ounces (340 g) spaghetti
3 cups (450 g) cooked shredded chicken breast
2 cups (200 g) shredded sharp cheddar cheese, divided
1 cup (100 g) shredded mozzarella cheese
1 can (10.5 ounces / 300 g) cream of chicken soup
1 can (10.5 ounces / 300 g) cream of mushroom soup
1 cup (240 ml) chicken broth
1 cup (240 ml) whole milk
1 small onion, finely diced (½ cup / 75 g)
1 medium red bell pepper, diced (1 cup / 150 g)
2 cloves garlic, minced
2 tablespoons (30 g) unsalted butter
1 teaspoon salt
½ teaspoon black pepper
½ teaspoon paprika
½ teaspoon Italian seasoning

Instructions

  • Preheat oven to 350°F (175°C). Grease a 9×13-inch (23×33 cm) baking dish.

  • Cook spaghetti according to package directions until al dente. Drain and set aside.

  • In a skillet over medium heat, melt butter. Sauté onion and bell pepper for 4–5 minutes. Add garlic and cook 30 seconds.

  • Stir in cream of chicken soup, cream of mushroom soup, chicken broth, milk, salt, pepper, paprika, and Italian seasoning. Simmer 3–5 minutes.

  • In a large bowl, combine spaghetti, shredded chicken, 1½ cups (150 g) cheddar, and mozzarella. Pour sauce over and mix well.

  • Transfer to baking dish and top with remaining ½ cup (50 g) cheddar cheese.

  • Bake uncovered for 25–30 minutes until bubbly and cheese is melted. Let rest 5–10 minutes before serving.

Notes

Slightly undercook pasta to prevent softness after baking.
Add vegetables like broccoli or peas for extra nutrition.
Store leftovers in the refrigerator for up to 4 days.
Add a splash of milk when reheating to maintain creaminess.
