Ingredients

Scale
  • 1 lb ground beef
  • 1 packet taco seasoning
  • 1 can (16 oz) refried beans
  • 1 can (10 oz) cream of mushroom soup
  • 1/2 cup sour cream
  • 1 bag (8 oz) shredded cheddar cheese
  • 1 package flour tortillas
  • 1 cup salsa (optional)
  • Chopped green onions (for garnish)
  • Sliced black olives (for garnish)

Instructions

Preheat your oven to 350°F (175°C).

In a skillet, cook ground beef over medium heat until fully browned. Drain any excess fat.

Add taco seasoning and follow packet instructions (usually involves adding some water and simmering).

In a separate bowl, mix together the cream of mushroom soup and sour cream.

In a baking dish, start layering: place a layer of flour tortillas at the bottom, spread some of the sour cream mixture, followed by a layer of refried beans, then the seasoned ground beef, and sprinkle some shredded cheese.

Repeat the layers until all ingredients are used, finishing with a layer of cheese on top.

Cover the dish with foil and bake for 30 minutes.

Remove foil and bake for an additional 10 minutes or until the cheese is bubbly and slightly golden.

Garnish with chopped green onions and sliced black olives before serving. You can also add salsa on the side if desired.

Notes

  • Customize with your choice of protein or make vegetarian.

  • Can be prepared ahead of time and refrigerated or frozen.

  • Use mild or spicy salsa depending on taste.

  • Adjust the amount of cheese and cream for a lighter version.

  • Serve with Mexican rice, black beans, and a side salad for a complete meal.
