Ingredients

Scale

For the chicken cutlet:

  • 4 boneless, skinless chicken breasts
  • 1 cup panko breadcrumbs
  • ½ cup grated Parmesan cheese
  • 1 tsp garlic powder
  • 1 tsp dried oregano
  • 1 tsp paprika
  • 1 tsp salt
  • ½ tsp black pepper
  • 2 large eggs, beaten
  • 2 tbsp olive oil

For the garlic butter:

  • 4 tbsp unsalted butter, melted
  • 2 cloves garlic, minced
  • 2 tbsp fresh parsley, chopped

Instructions

Preheat your oven to 400°F (200°C).

In a shallow bowl, mix the panko breadcrumbs, Parmesan cheese, garlic powder, oregano, paprika, salt, and black pepper.

Dip each chicken breast into the beaten eggs, then coat it in the breadcrumb mixture, pressing gently to ensure the crumbs stick.

Place the coated chicken cutlets on a baking sheet lined with parchment paper or a silicone baking mat. Drizzle olive oil over the cutlets.

Bake for 20-25 minutes, or until the chicken is cooked through and golden brown.

In a small bowl, combine the melted butter, minced garlic, and chopped parsley.

Once the chicken is done baking, brush the garlic butter mixture over the cutlets.

Serve immediately and enjoy!

Notes

  • Make Ahead: You can prep the cutlets a day ahead by coating the chicken breasts and storing them in the fridge until you’re ready to bake them.

  • Healthier Options: For a lower-fat version, use less butter or substitute with extra olive oil. You can also swap out the panko breadcrumbs for whole wheat or gluten-free versions.

  • Cheese Alternatives: Feel free to experiment with different cheeses like Pecorino Romano or mozzarella for a unique twist.

  • Serving Suggestions: Serve the cutlets with a light salad, roasted vegetables, or over pasta for a more substantial meal. For a fun twist, slice them into strips and serve as an appetizer with a dipping sauce.
