  • 4 medium potatoes, peeled and diced
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup shredded cheddar cheese
  • 1 tsp dried thyme
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

Heat olive oil in a large skillet over medium heat.

Add the chopped onion and garlic, sauté until softened.

Add the ground beef to the skillet, cook until browned and cooked through. Drain excess fat if needed.

Add diced potatoes to the skillet and stir well.

Season with thyme, salt, and pepper.

Pour in the heavy cream and stir to combine.

Cover the skillet and cook on medium-low heat for about 20-25 minutes, stirring occasionally, until potatoes are tender.

Sprinkle shredded cheddar cheese over the skillet, cover and cook for another 5 minutes until cheese is melted.

Garnish with fresh parsley if desired and serve hot.
