  • 1 lb ground beef
  • 1 medium onion chopped
  • 2 cloves garlic minced
  • Salt and pepper to taste
  • 1 teaspoon paprika
  • 1/2 teaspoon dried thyme
  • 4 cups potatoes thinly sliced (about 4 medium potatoes)
  • 1 1/2 cups shredded cheddar cheese
  • 1 can 10.5 oz cream of mushroom soup
  • 1/2 cup milk
  • 2 tablespoons olive oil

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a skillet over medium heat, cook ground beef until browned. Drain excess fat.
  3. Add chopped onion and garlic to the skillet and sauté until soft. Season with salt, pepper, paprika, and thyme. Remove from heat.
  4. In a bowl, whisk together the cream of mushroom soup and milk until smooth.
  5. Lightly grease a 9×13-inch baking dish with olive oil.
  6. Layer half of the sliced potatoes on the bottom of the dish.
  7. Spread half of the beef mixture over the potatoes.
  8. Sprinkle a layer of shredded cheese over the beef.
  9. Pour half of the soup mixture evenly over the cheese.
  10. Repeat layers with remaining potatoes, beef, cheese, and soup mixture.
  11. Cover the dish with aluminum foil and bake for 45 minutes.
  12. Remove foil and bake for another 15 minutes or until potatoes are tender and top is golden and bubbly.
  13. Let rest for 5 minutes before serving.

Notes

  • Use a mandoline for evenly sliced potatoes to ensure even cooking.
  • Freshly shredded cheese melts better and gives a creamier texture than pre-shredded.
  • Let the casserole rest for at least 5 minutes before serving to allow layers to set.
  • For added texture, top with crushed crackers or French fried onions during the last 10 minutes of baking.
  • Store leftovers in individual portions for easy reheating and meal prep throughout the week.
  • Add chopped herbs like parsley or green onions before serving for a fresh finish.
