Ingredients

Scale

For the steak bites:

  • 1 ½ pounds sirloin steak, cut into bite-sized cubes
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 3 tablespoons unsalted butter
  • 4 garlic cloves, minced
  • 1 teaspoon fresh thyme or ½ teaspoon dried

For the Parmesan cream sauce:

  • 2 tablespoons unsalted butter
  • 3 garlic cloves, minced
  • 1 tablespoon all-purpose flour
  • 1 cup heavy cream
  • ½ cup grated Parmesan cheese
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)

Instructions

Season the steak bites generously with salt and pepper.

Heat olive oil in a large skillet over medium-high heat. Add steak bites in a single layer and sear for 2 to 3 minutes per side until browned and cooked to desired doneness.

Reduce the heat to medium and add butter, minced garlic, and thyme to the pan. Stir to coat the steak bites in the garlic butter. Remove the steak bites from the skillet and set aside.

In the same skillet, melt butter for the sauce over medium heat. Add minced garlic and cook until fragrant, about 30 seconds.

Whisk in the flour and cook for another 30 seconds.

Slowly pour in the heavy cream while whisking continuously. Bring the mixture to a gentle simmer.

Stir in the Parmesan cheese and cook until the sauce thickens, about 2 to 3 minutes. Season with salt and pepper to taste.

Return the steak bites to the skillet and toss in the Parmesan cream sauce until well coated.

Garnish with fresh parsley if desired and serve immediately.

Notes

  • Always let steak rest before cutting and after cooking for the juiciest bites.

  • Use freshly grated Parmesan for the smoothest sauce texture.

  • Add spinach or mushrooms for added nutrition and depth.

  • If reheating, do so gently to preserve sauce texture and avoid overcooking the steak.

  • Substitute chicken or shrimp for protein variation without changing the sauce.
