Churro Cheesecake Cookies: A Sweet Fusion of Cinnamon and Cream

These churro cheesecake cookies combine the warm, spiced flavor of traditional churros with the rich, creamy center of a classic cheesecake. Wrapped in a soft, buttery cookie and rolled in cinnamon sugar, they’re the ultimate dessert mashup that’s perfect for any occasion.

For the cookie dough:

  • ½ cup unsalted butter, softened
  • ¾ cup granulated sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 1 ½ cups all-purpose flour
  • ½ tsp baking soda
  • ¼ tsp salt

For the cheesecake filling:

  • 4 oz cream cheese, softened
  • 2 tbsp granulated sugar
  • ½ tsp vanilla extract

For the cinnamon-sugar coating:

  • ¼ cup granulated sugar

1 tsp ground cinnamon

Instructions

Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.

Add the egg and vanilla extract, mixing until combined.

In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until a dough forms.

In another bowl, beat the cream cheese, granulated sugar, and vanilla extract until smooth. Chill the filling for 10–15 minutes to firm up slightly.

In a small bowl, mix the cinnamon and sugar for coating.

Scoop a tablespoon of cookie dough and flatten it slightly. Add a small spoonful of the cheesecake filling to the center. Top with another piece of dough and seal the edges to enclose the filling completely.

Roll each assembled cookie in the cinnamon-sugar mixture until fully coated.

Place cookies on the prepared baking sheet and bake for 10–12 minutes, or until the edges are set and lightly golden.

Let cookies cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
