This no-bake Mint Aero traybake is a chilled chocolate dessert packed with creamy milk chocolate, minty Aero bars, crunchy biscuit pieces, and gooey marshmallows—all topped with a smooth layer of peppermint white chocolate. It’s easy to make, quick to prepare, and perfect for any occasion.
For the topping:
Line an 8×8-inch square baking tin with parchment paper.
In a saucepan over low heat, melt the butter, milk chocolate, and golden syrup together, stirring until smooth.
Remove from heat and stir in the crushed digestive biscuits, chopped Mint Aero bars, and mini marshmallows until evenly combined.
Press the mixture into the prepared tin and smooth the top with the back of a spoon.
Melt the white chocolate gently over a double boiler or in the microwave. Stir in peppermint extract and a small amount of green food coloring if using.
Pour the melted white chocolate over the base and spread evenly. Sprinkle with extra chopped Mint Aero pieces on top.
Chill in the fridge for at least 2 hours or until fully set.
