Ingredients

Scale

Main Ingredients:

  • 16 oz linguini (or substitute with fettuccini, spaghetti, bucatini, etc.)
  • 1/4 cup butter (softened for buttering the casserole dish)
  • 1 rotisserie chicken, shredded
  • 2 cups mozzarella cheese, shredded
  • 1 cup cheddar cheese, shredded
  • 1/4 cup parmesan cheese, grated

Tetrazzini Sauce Base:

  • 2 (10.5 oz) cans cream of chicken condensed soup
  • 1 (8 oz) block cream cheese, softened (ensure it’s soft enough to whisk)
  • 5 garlic cloves, minced
  • 1 cup sour cream
  • 1.5 cups chicken broth
  • 1 tsp dried parsley (plus extra for topping)
  • 1/2 tsp pepper
  • 1 tsp Italian seasoning

Instructions

  1. Preheat the oven to 375°F.
  2. Boil the noodles to al dente according to the package instructions. While the noodles cook, prepare the sauce base in your largest mixing bowl.
  3. Combine all sauce ingredients and whisk until smooth. Add half of the shredded cheeses, the shredded rotisserie chicken, and the cooked noodles. Toss everything together until the noodles are well coated and evenly combined.
  4. Butter the bottom and sides of a casserole dish. Transfer the pasta mixture into the dish, distributing it evenly.
  5. Sprinkle the remaining shredded cheeses on top and finish with a light dusting of dried parsley.
  6. Bake for 35 minutes or until the top is bubbly and golden brown.
  7. Optional: Sprinkle with seasoning salt and red pepper flakes before serving.

Notes

  • Pasta Choice: Any long pasta, such as linguini, spaghetti, or fettuccini, works well. Short pasta like penne can also be used for a twist.
  • Protein Options: While rotisserie chicken is quick and convenient, cooked chicken breasts, thighs, or turkey are excellent substitutes.
  • Cheese Variations: For a unique flavor, try swapping cheddar for Gruyère or adding provolone.
  • Vegetable Additions: Peas, spinach, or mushrooms can be stirred into the sauce for added nutrition and variety.
  • Make-Ahead Friendly: Assemble the casserole a day in advance and refrigerate until ready to bake.
  • Freezer-Friendly: Freeze the unbaked casserole for up to 3 months, making it a great option for meal prepping.
