  • 2 tbsp vegetable oil
  • 1 lb chicken breast, thinly sliced
  • 1 cup shredded cabbage
  • Β½ cup julienned carrots
  • Β½ cup sliced bell peppers
  • 3 green onions, chopped
  • 2 cloves garlic, minced

For the chow mein sauce:

  • ΒΌ cup low-sodium soy sauce
  • 1 tbsp oyster sauce
  • 1 tbsp hoisin sauce
  • 1 tsp sesame oil
  • Β½ tsp ginger, grated
  • Β½ tsp red pepper flakes (optional)
  • 1 tsp cornstarch (for thickening)

Instructions

  1. Cook the chow mein noodles according to the package instructions, then drain and set aside.
  2. In a small bowl, whisk together all the sauce ingredients and set aside.
  3. Heat 1 tbsp of oil in a large skillet or wok over medium-high heat. Add the chicken and cook until golden brown and fully cooked. Remove and set aside.
  4. In the same pan, add the remaining oil. Stir-fry garlic, cabbage, carrots, and bell peppers for 2-3 minutes until slightly tender.
  5. Add the cooked chicken and noodles back to the pan. Pour the sauce over everything and toss to combine.
  6. Stir-fry for another 2 minutes until everything is well coated and heated through.
  7. Garnish with green onions and serve immediately.
