  • 12 ounces pasta (penne, rotini, or shells)
  • 1 tablespoon olive oil
  • 1 pound ground beef
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 packet (1 ounce) taco seasoning
  • 1 can (14.5 ounces) diced tomatoes, drained
  • 1 cup tomato sauce
  • 1/2 cup beef broth or water
  • 1 cup shredded cheddar cheese
  • 1/2 cup shredded Monterey Jack cheese
  • 1/2 cup sour cream
  • 1/2 teaspoon salt (adjust to taste)
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon chili powder (optional for extra spice)

Fresh cilantro or green onions for garnish

Instructions

    1. Cook the pasta according to package instructions until al dente. Drain and set aside.
    2. Heat olive oil in a large skillet over medium heat. Add ground beef and cook until browned. Drain excess grease.
    3. Add chopped onion and garlic to the skillet. Sauté for 2-3 minutes until softened.
    4. Stir in taco seasoning, diced tomatoes, tomato sauce, and beef broth. Simmer for 5 minutes.
    5. Reduce heat to low and stir in the cooked pasta. Mix well.
    6. Add shredded cheddar and Monterey Jack cheese, stirring until melted and creamy.
    7. Remove from heat and stir in sour cream. Adjust seasoning if needed.
    8. Garnish with fresh cilantro or green onions before serving.
