1 tbsp yellow mustard
3–4 oz cheddar or mozzarella cheese, cut into 1/2-inch cubes

Preheat oven to 375°F (190°C).
Lightly grease a mini muffin tin with cooking spray or oil.
In a large bowl, combine:
1 lb ground beef
1/2 cup breadcrumbs
1/4 cup milk
1 large egg
1 small onion, finely chopped
2 cloves garlic, minced
1 tsp salt
1/2 tsp black pepper
1 tsp Worcestershire sauce
1/4 cup ketchup
1 tbsp yellow mustard
Mix gently with hands or a spoon until everything is evenly combined. Do not overmix.
Take about 2 tablespoons of the meat mixture, flatten it in your palm.
Place one cheese cube in the center.
Wrap the meat around the cheese and roll into a ball, sealing the cheese inside.
Place each meatball into a cup of the greased mini muffin tin.
Mix the remaining 1/4 cup ketchup with a little more mustard (optional).
Spoon a small amount over each meatball bite.
