Cheesy Ham Biscuits

These cheesy ham biscuits are soft, savory, and loaded with sharp cheddar cheese, diced cooked ham, and fresh chives. Perfect for breakfast, brunch, or a hearty snack, they come together in under 30 minutes and are ideal for using leftover ham or turkey bacon.

2 cups all-purpose flour

1 tablespoon baking powder

1/2 teaspoon baking soda

1/2 teaspoon salt

1/4 cup unsalted butter, cold and cubed

3/4 cup buttermilk

1 cup shredded sharp cheddar cheese

1/2 cup diced cooked ham (or cooked turkey bacon)

2 tablespoons chopped fresh chives

Instructions

Step 1: Preheat the oven
Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper or a silicone baking mat.

Step 2: Mix the dry ingredients
In a large bowl, whisk together the flour, baking powder, baking soda, and salt until evenly combined.

Step 3: Cut in the butter
Add the cold cubed butter to the flour mixture. Using a pastry cutter or your fingers, cut the butter into the dry ingredients until the mixture resembles coarse crumbs.

Step 4: Add wet ingredients and mix-ins
Pour in the buttermilk and stir gently just until moistened. Fold in the shredded cheddar, diced ham (or turkey bacon), and chopped chives. Do not overmix the dough.

Step 5: Shape the biscuits
Drop large spoonfuls of dough onto the prepared baking sheet, spacing them about 2 inches apart. For extra golden tops, sprinkle with a little more cheddar.

Step 6: Bake
Bake for 12–15 minutes, or until the tops are golden brown and the biscuits are set.

Step 7: Serve
Serve warm with butter, jam, or enjoy on their own!

Notes

  • Substitute buttermilk: Mix ¾ cup milk with 1 tablespoon lemon juice or vinegar. Let sit 5 minutes before using.

  • No chives? Use finely chopped green onions or parsley.

  • To freeze: Place unbaked dough mounds on a tray, freeze until solid, then store in freezer bags. Bake from frozen, adding 2–4 extra minutes.

  • Cheese options: Try Monterey Jack, Swiss, or Gruyère for a twist.

  • Make it spicy: Add ¼ teaspoon cayenne or a few chopped jalapeños to the dough.
