Ingredients

Scale

For the beef chops:

  • 4 beef chops
  • 2 tablespoons butter
  • 4 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and black pepper to taste
  • 1 tablespoon olive oil

For the mashed potatoes:

  • 4 large potatoes, peeled and cubed
  • 3 tablespoons butter
  • ½ cup milk
  • Salt and black pepper to taste

Instructions

Preheat a skillet over medium-high heat and add olive oil.

Season the beef chops with salt, black pepper, thyme, and rosemary on both sides.

Add the beef chops to the skillet and cook for about 3-4 minutes per side until golden brown and cooked to your preferred doneness.

Reduce the heat to low, add butter and minced garlic to the skillet, and baste the beef chops with the melted butter for an additional minute. Remove from heat and let rest.

For the mashed potatoes, boil the cubed potatoes in a large pot of salted water until tender, about 15-20 minutes. Drain and return them to the pot.

Mash the potatoes while adding butter and milk until smooth and creamy. Season with salt and black pepper.

Serve the beef chops with the mashed potatoes, drizzling any remaining garlic butter from the skillet over the top.

Notes

  • For the Best Results: Always let your pork chops come to room temperature before cooking to ensure even cooking and avoid tough meat. A meat thermometer is a great tool to prevent overcooking.
  • Mashed Potato Tip: For extra creamy mashed potatoes, make sure to use starchy potatoes like Russets and don’t skimp on the butter and cream. You can also infuse the potatoes with roasted garlic for an extra layer of flavor.
  • Cooking Variations: This recipe can be customized with different meats like chicken, steak, or fish, or made vegetarian by swapping in garlic butter mushrooms. Feel free to play around with additional flavorings such as adding cheese to your mashed potatoes or making the dish spicier with red pepper flakes.
  • Meal Prep: This recipe is great for meal prep! Both the pork chops and mashed potatoes can be made ahead and reheated for a quick and satisfying meal throughout the week. Just be sure to store them in separate containers and reheat gently to preserve moisture.
