2 cups (250 g) all-purpose flour
1 tablespoon baking powder
1/2 teaspoon baking soda
1 teaspoon granulated sugar
1 teaspoon salt
1/2 cup (113 g) unsalted butter, very cold and cubed
1 cup (240 g) full-fat sour cream
23 tablespoons (3045 ml) cold milk (if needed)
2 tablespoons (28 g) melted butter for brushing tops

Instructions

  • Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper.

  • In a large bowl, whisk together flour, baking powder, baking soda, sugar, and salt.

  • Cut in the cold butter until the mixture resembles coarse crumbs.

  • Stir in sour cream until dough forms. Add cold milk if needed.

  • Turn dough onto a floured surface and gently pat into a 1-inch (2.5 cm) thick rectangle. Fold 2–3 times, then pat again to 1-inch thickness.

  • Cut with a 2.5-inch (6 cm) biscuit cutter and place biscuits on baking sheet so they touch.

  • Bake 12–15 minutes until golden brown.

  • Brush tops with melted butter and serve warm.

Notes

Use very cold butter for maximum flakiness. Do not overmix the dough. For extra flavor, add shredded cheese or chopped fresh herbs before mixing in the sour cream.
