2 1/4 cups (280 g) all-purpose flour
1/2 cup (100 g) granulated sugar

1/4 teaspoon salt
1 cup (226 g) unsalted butter, melted
1 large egg
1 teaspoon vanilla extract

For the Topping:
8 ounces (226 g) cream cheese, softened
2 large eggs
1 teaspoon vanilla extract
4 cups (480 g) powdered sugar
1/2 cup (113 g) unsalted butter, melted

Instructions

  • Preheat oven to 350°F (175°C). Grease or line a 9×13-inch baking pan.

  • In a bowl, combine flour, sugar, baking powder, and salt.

  • Add melted butter, egg, and vanilla. Mix until a soft dough forms.

  • Press the dough evenly into the prepared pan.

  • In another bowl, beat cream cheese until smooth.

  • Add eggs and vanilla; mix well.

  • Gradually mix in powdered sugar and melted butter until smooth.

  • Pour topping over crust and spread evenly.

  • Bake for 40–45 minutes until edges are golden and center slightly jiggles.

  • Cool completely before slicing. Refrigerate for cleaner cuts if desired.

Notes

Do not overbake to maintain the gooey center. Store in an airtight container at room temperature for up to 2 days or refrigerate for up to 5 days. Freeze individual slices for up to 2 months.
