For the Base:
2 1/4 cups (280 g) all-purpose flour
1/2 cup (100 g) granulated sugar
1 teaspoon baking powder
1/4 teaspoon salt
1 cup (226 g) unsalted butter, melted
1 large egg
1 teaspoon vanilla extract
For the Topping:
8 ounces (226 g) cream cheese, softened
2 large eggs
1 teaspoon vanilla extract
4 cups (480 g) powdered sugar
1/2 cup (113 g) unsalted butter, melted
Preheat oven to 350°F (175°C). Grease or line a 9×13-inch baking pan.
In a bowl, combine flour, sugar, baking powder, and salt.
Add melted butter, egg, and vanilla. Mix until a soft dough forms.
Press the dough evenly into the prepared pan.
In another bowl, beat cream cheese until smooth.
Add eggs and vanilla; mix well.
Gradually mix in powdered sugar and melted butter until smooth.
Pour topping over crust and spread evenly.
Bake for 40–45 minutes until edges are golden and center slightly jiggles.
Cool completely before slicing. Refrigerate for cleaner cuts if desired.
Do not overbake to maintain the gooey center. Store in an airtight container at room temperature for up to 2 days or refrigerate for up to 5 days. Freeze individual slices for up to 2 months.
