Instructions

Step 1: Preheat oven

Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it with cooking spray or olive oil.

Step 2: Warm tortillas

Microwave the tortillas for 20–30 seconds wrapped in a damp paper towel. This makes them soft and easy to roll without cracking.

Step 3: Make the filling

In a large bowl, mix together:

  • Shredded chicken

  • Softened cream cheese

  • Shredded cheese

  • Salsa

  • Cumin

  • Chili powder

  • Salt and pepper

  • (Optional) green onions or cilantro
Mix until well combined and creamy.

Step 4: Roll the taquitos

  • Place a tortilla on your work surface.

  • Spoon 2–3 tablespoons of the filling down the center.

  • Roll it up tightly and place seam-side down on the baking sheet.

  • Repeat with all tortillas and filling.

Step 5: Brush with oil

  • Lightly spray or brush each taquito with olive oil or cooking spray.

  • This helps them get crispy and golden in the oven.

Step 6: Bake

  • Bake for 15–20 minutes, flipping halfway through.

  • For extra crispiness, broil for an additional 1–2 minutes at the end (watch carefully to avoid burning).

Step 7: Serve

  • Let cool for 2–3 minutes, then serve with your favorite toppings and dipping sauces.

Notes

  • Tortilla tip: Flour tortillas are easier to roll, but corn tortillas offer a more authentic flavor. Choose based on preference or dietary needs.

  • Make it spicier: Add chopped jalapeños or use hot salsa.

  • Make-ahead: Assemble and freeze before baking. Bake straight from frozen—just add 5–7 minutes to the baking time.

  • Reheating: Reheat leftovers in the oven or air fryer for best results.

  • Cheese tip: Mix cheddar and Monterey Jack for a creamy, flavorful combo.
