Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Pat the chicken thighs dry with paper towels. Rub olive oil evenly over each thigh.
  3. In a small bowl, mix garlic powder, smoked paprika, salt, and black pepper. Season the chicken thighs generously on all sides with the spice mixture.
  4. Spread the sliced onions evenly over the bottom of a 9×13-inch baking dish.
  5. Place the chicken thighs skin-side up on top of the onions.
  6. Brush barbecue sauce generously over the top of each chicken thigh. Reserve some barbecue sauce for later.
  7. Bake the chicken in the preheated oven for 35-40 minutes, or until the internal temperature of the chicken reaches 165°F (74°C).
  8. During the last 5 minutes of baking, brush the remaining barbecue sauce over the chicken and return it to the oven.
  9. Once cooked, remove the chicken from the oven and let it rest for 5 minutes before serving.
  10. Serve the chicken thighs with the roasted onions and your favorite sides.
