Ingredients

Scale

  • 1 ½ cups all-purpose flour
  • ½ tsp baking soda
  • ½ tsp ground cinnamon
  • ¼ tsp salt
  • ½ cup unsalted butter, softened
  • ½ cup brown sugar
  • ¼ cup granulated sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 1 ½ cups finely chopped peeled apple (about 1 medium apple)
  • ½ cup chopped walnuts or pecans (optional)

Instructions

Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.

In a medium bowl, whisk together flour, baking soda, cinnamon, and salt.

In a large bowl, beat the butter, brown sugar, and granulated sugar together until creamy and smooth.

Add the egg and vanilla extract to the butter mixture and mix until well combined.

Gradually add the dry ingredients to the wet ingredients, stirring just until combined.

Fold in the chopped apples and nuts if using.

Drop tablespoon-sized amounts of dough onto the prepared baking sheet, spacing them about 2 inches apart.

Bake for 10–12 minutes, or until the edges are lightly golden and the centers are set.

Let the cookies cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.

Notes

  • Apple Size: Use about 1 medium apple, peeled and finely chopped, to get 1 ½ cups.

  • Spice Adjustment: Feel free to increase cinnamon or add a pinch of nutmeg for deeper flavor.

  • Chilling Optional: For thicker cookies, chill the dough for 30 minutes before baking.

  • Storage Tip: Store at room temperature in an airtight container for up to 4 days, or freeze for longer shelf life.

  • Serving Suggestion: Top with a drizzle of maple glaze for extra sweetness and visual appeal.
